I have added quite a few flavour variations that are proven winners.
Basic Recipe - Perfect as is!
Creamy Mushroom Gnocchi
* 500g/1 pound gnocchi * 1 cup baby spinach * 200g/7oz button mushrooms, sliced * 250ml/9oz Cooking cream of your choice. Please note variations/substitutes below.
Cook gnocchi as per packet instructions in a pot of boiling water.
Sautee mushrooms in a non stick pan and stir until softened. Add cream for cooking and simmer for 5 to 7 minutes allowing time for the flavours to meld. Add baby spinach and stir for 1-2 minutes. Season to taste.
Serve creamy mushroom sauce on top of the cooked gnocchi, season to taste and finish with a little grated parmesan if you prefer.
Now, we have quite a few people who cannot eat garlic or onions, which are two of my favourite ingredients, so the recipe above is perfect if you cannot eat either of those ingredients. If you can eat garlic, onions or even chilli you can add one or all of the following, again this all about getting the taste right for YOU!
* Add crushed garlic to taste
* A little fresh chilli is wonderful
* finish with a little parsley
Again, all of the above is OPTIONAL more tips below. This recipe is so versatile and can easily be tailored to suit your needs.
Left Over Tip:
Make a double batch and freeze the leftover sauce in individual snap lock bags. This is the perfect amount for a quick lunch or dinner with a few minutes notice.
You can use normal cream, cooking cream, lactose free cream, sour cream is another variation, coconut cream, carnation cream/milk. It's up to you, your taste and preference.
If you use normal cream, just be careful with the temp as always when cooking with cream, keep an eye on it during the process to ensure it doesn't curdle. You can also use low fat cream, carnation evaporated cream or even coconut cream which of course will have a completely different taste but if you like the taste of coconut is a lovely variation.
You can also use Zymil cream if you are lactose intolerant or evaporated milk/carnation cream. I gets down to your taste and ingredient availability.
If you wish to add garlic and bacon, then that's another variation you can work with. I just love this simple recipe as is and I oftern throw in whatever herbs I have in the garden like parsley. You can add garlic, zucchini, whatever you want. These are all just suggestions to get your imagination going and to prove just how easy a great base recipe can be and how you can definitely personalise the flavour with added ingredients of your choice.
If you can't help yourself you can add chicken breast, cubed and browned in the pan or zucchini cut into "coin" sized slices instead if you want to go meat free.
Mushrooms are a lean protein source as they have zero cholesterol, fats and very low carbohydrates. Never peel mushrooms as most of the vitamin B12 (the energy superstar) is present on their surface. To this yummy sauce, add some freshly chopped parsley for colour and flavour. Serve over pasta, rice or even a baked potato.
