Creamy Bacon & Sun Dried Tomato Chicken:
* 4 chicken breast fillets, cut into strips * Half cup semi-dried tomatoes, halved * 6 rashers bacon, cut into strips * 1 tub (250g/8oz) Philadelphia Cream for cooking (normal cream works if you can't find any but this cream is ideal as it's impossible to curdle when cooking)
In a nonstick pan, brown the chicken, turning once, 4-5 minutes. Add the bacon and brown. Add the tomatoes and season, then toss to combine. Add the cream and simmer until slightly thickened 4 -5 minutes.
Serve warm over a bed of rice, soft polenta or steamed vegetables.
Tip: You can use carnation cream, normal cream and zymil cream if you prefer. Philly cream for cooking is NOT the same as PHILLY Cream Cheese.

The past few weeks have been some of the toughest times we’ve ever been through both individually and as a band. We continue to offer our support to the family and friends of Johann Ofner who tragically passed away on the set of our music video. We are thankful for his family’s blessing in allowing us to put on this tribute concert, to celebrate the life of this amazing man and loving father.
Did you know that there's a girl singing her way around the country, town to town, as we speak? Whatever people chuck in her guitar case gets split between beyondblue (great gang) and LYS. She's been through some epic shit, which is for her to talk about, not me, but you can catch her story at A Girl, Her Car and Her Guitar. She's been invited to play in Parliament House in Canberra next week too, which I'm delighted to have an invite to. I'll stir the pot, don't you worry. Mel also packed thousands of FuckBoxes over Christmas with us and we consider her family. She's trying to raise 100K and she's over 28K already. This is for any villagers in the Albury/Wodonga region, or for anyone with bordertown friends (please share?)

You're not going to meet a better human. If just one villager could give her a hug from me this weekend, I'd be so grateful. It would do so much more than an emoticon ever will.

I vividly remember the day you entered the world. You were so wanted, so loved and so incredibly important to all our future plans. We had no idea that just 32 days later we would be planning your funeral.
We are all so immensely proud at what you've achieved. You leave behind such an enormous legacy, but with that too is an enormous hole in our lives that still devastates us. Even now as I sit typing this out, tears streaming down my face, I look over at your mum shedding tears as she feeds your little sister, I look at your big sister writing you a card that she demands be sent to heaven today on a heart shaped balloon and I selfishly yearn for just one more interaction. Just one more cuddle. I'd even take just one more nappy change.
I'll never know just how many lives you've saved, but in my mind you've made society a far better place. It doesn't remove our hurt, but I'm grateful that all the other mums and dads in this country can squeeze their little ones and know they have access to the most advanced preventative measures available when it comes to fighting whooping cough. In my mind it'll always be because of the little boy in the blue and white hat.
